Tasty Aubergines/ Eggplants

Good afternoon people!

Here I am with a new recipe. I like this dish very very much! Whenever I cook aubergines I always think of the same recipes (as melanzane alla parmigiana, a classic italian dish), however this recipe is different. Actually, we are using mediterrenean ingredients, but the flavour is not classic!


What do we need? 

Aubergines
Garlic
Parsley
Extra virgin Olive Oil
Ripe tomatoes
Cheese slices


Once again, this recipe is very easy.

Place the minced garlic and  parsley in a bowl (if it's fresh it's much better) and add the olive oil.
Slice tomatoes into small pieces. Cut the aubergines and place them in a baking tray with parchment paper. Put a little bit of the mix of garlic and parsley on them, and then add tomatoes.
Place in a preheated oven at 180 degrees for about 8-10 minutes. At this point, remove from oven and add small pieces of cheese slices (or your favourite cheese, I think it would be perfect with cheddar).
Put back in the oven for a few minutes to let
the cheese melt.

Now you are ready! Enjoy your meal!
