Nutella Tiramisu

Nutella Tiramisu

The Nutella Tiramisù is a variation of the classic Italian dessert.. one of the tastier ever!


Ingredients

Eggs 4
Mascarpone cheese 500 g
Sugar 5 spoons
Marsala 4 spoons
Unsweetened cocoa powder
Nutella
Lady fingers (savoiardi) 400-450 g


  • First, prepare the coffee and let it cool.
  • While the coffee is cooling down, prepare the cream. Take two bowls and separate the egg whites from the yolks.
  • Whip the egg whites very firm with the electric whips.
  • Without washing them, beat the egg yolks with the sugar. When the mixture will be smooth, add the mascarpone cheese and mix it.
  • Now, add the egg whites, embedding them very gently, to make sure that they won't deflate.
  • Add the Marsala wine and mix it.
  • Now take another bowl and put in at least 6 tablespoons of Nutella. Warm it so it will be more liquid.
  • Now you are ready to start. Put some cream on the pan.
  • Wet the lady fingers in the coffee. Not too much otherwise it will form an unpleasant liquid at the bottom of the pan.
  • Do the first layer of ladyfingers, then cover with cream, then add the Nutella with a spoon. From my experience I can tell you that you have to put a loto a Nutella so you can taste its flavour..
  • Make two layers and finish the job sprinkle the cocoa powder.
  • Refrigerate for at least an hour before serving.
  • Following the same procedure you can also do small portions as you can see in the photo!

Chicken Breast with Vegetables Mix

This recipe is easy as always and I want to share it with you because it's a really good way to eat chicken with vegetables without cooking a greasy dish. Let's see the ingredients!


Aubergines 1
Courgettes 1
Potatoes 1
Peppers 1
Onion 1
Chicken breast 
Oregano
Olive oil
Salt

3 servings

  •  Preheat the oven at 180°-200°.
  • Chop the vegetables and add a little bit of olive oil and the oregano.
  • Put in the oven for 40 minutes and turn sometimes in order not to burn the top.
  • Now add the chopped chicken and cook for further 20 minutes.
  • Season with salt.

Enjoy your meal!

Lentil and Sausage Soup

Lentil and Sausage Soup

Lentil and sausage soup came up to my mind remembering the classic Polish soup "Żurek", which I've tasted last summer thanks to a friend. In fact, even that soup is cooked with carrots, potatoes and sausage, but  it is much more complicated. Mine is easy and delicious, you should definitely try it!



Ingredients
Lentils 150/200 gr.
Susages 400 gr.
1 Potato
1 - 2 Carrots
Onion 1/2
Pepper
Extra Virgin Olive Oil
Vegetable Stock or Water
Pepper
Salt

  • First, soak the lentils in cold water. I used those tiny ones that do not need this step, but I let them rest anyway for about two hours.
  •  Chop half a onion and half a carrot and stir fry in olive oil.
  •  When softened, place the sausage cut into pieces and cook for 10-15 minutes.
  •  At this point, drain the lentils and add to the sausage with three glasses of water or broth and cook with the lid.
  •  Add the salt, the pepper, the carrot and  the chopped potato.
  •  Cook for about half an hour.

Mixed Berries Cheesecake

The cheesecake is one of my favourite dessert, with its fresh and particular taste. It's perfect during summertime! This recipe comes from a friend of mine, whose mother is a great cook! Everyone loves this cake, so trust me if I say it's so good!



Ingredients
250 gr. Ricotta
250 gr. Mascarpone
100 gr. Butter
3 Eggs
1 Glass of Sugar
Vanilla
200 gr. Digestive Biscuits
170 gr. Mixed Berries
Mixed Berries Jam

  •  Make the cheesecake base: melt the butter in the microwave. Blitz the biscuits in a food processor to a fine crumb, add the melted butter and pulse until well combined. 
  • Tip into a 24cm springform cake tin and press down firmly into the base. Chill while you make the filling, at least for 1-2 hours.
  • Whisk the ricotta, the mascarpone, the eggs, the vanilla and the sugar.
  • Spoon over the biscuit base and smooth with a spatula.
  •  Bake at 180° for about 35 minutes.
  •  When the cake will be cold, spoon over the jam and the place the mixed berries.
  • Keep in the fridge.

Honey and Lemon Chicken

Hi people, I'm back! I was really really busy these days so I didn't had time to post new recipes but here I am now! This recipe is easy but very good, as always! Are you ready?


Ingredients

2 Chicken Breast
1 Lemon
3 teaspoons of Honey
Extra Vergin Olive Oi1 
1 glass of White Wine
Salt

  • Cut the chicken breast into little stripes and flour it.
  • Put some olive oil in a pan and let warm. When it is warm enough, add the chicken. 
  • Let cook well and then simmer with the white wine until reduced.
  • Then add the lemon juice and let cook slowly.
  • At the end, add the honey and let caramelize. Season with salt!

Salmon Burger

The Salmon Burger is an original way to eat salmon, which is one of my favorite fish and which I buy very often. You can taste it on its own or put it in a sandwich as if it were meat ... it will always be delicious!




Ingredienti
Salmon 300 gr
Mustard 2 teaspoons
Onion 1/2
Flour
Salt
Extra Virgin Olive Oil


  • Mince the raw salmon in a food processor with the onion.
  • Pour the mixture in a bowl and combine the mustard, the flour and the salt.
  • Mix everything and shape the salmon burgers.If it is needed add flour (better if it is the wholewhat one)
  • .Put the olive oil in a pan (just a little) and heat it. Then cook the burgers on each side.

Dark Chocolate Muffins

The Dark Chocolate Muffins have been very appreciated by my family. Aside from my mom who does not like the bitter of the dark chocolate, my brother made me cook them again immediately within a week! So if you love dark chocolate they are perfect for you, otherwise add a little sugar or replace the dark chocoalte with milk one!



Ingredients

130 gr Whole Wheat Flour
100 gr Dark Chocolate 70%
60 Brown Sugar
40 ml Extra Virgin Olive Oil
2 Eggs
2 Spoons Cocoa Powder
1 Glass of Milk
 8 gr. Baking Powder
Salt q.s.

  •  Mix the flour, the baking powder, the brown sugar and the cocoa powder in a bowl.
  •  After mixing a bit, add the salt. In this way it won't enter in contact with thebaking powder.
  •  In another bowl beat the egg with the milk and the oil.
  •  In a saucepan, melt the chocolate.
  •  Now combine all the ingredients and mix them with the whisk.
  •  Bake at 170 ° for 15 minutes.

Veggie Burger


 I love burgers in every way, made by veggies, meat or fish they are always delicious! My recipe is very easy to cook and very good to eat :)



Ingredients

Chars (or Spinach)
Onion
Extra Virgin Olive Oil
Ricotta Cheese
Turmeric
Breadcrumbs
Salt


  •  The doses in this recipe are impossible to give, you need to add or not ingredients by eye and your taste.
  • Saute the chard with a little onion in olive oil. Add salt.
  • When cooked, let cool down.
  • In a blender or food processor, process the chard.
  • Transfer everything in a bowl, add the ricotta cheese, breadcrumbs and turmeric (or other spices of your choice) and mix everything. Add breadcrumbs until you will be able to shape a burger which is not going to break. 
  • Shape the burgers. 
  •  Put a little oil in a pan, heat it and then cook the burgers on both sides.

Radicchio and Ricotta Veggieballs

As often happens, the best recipes are born when you match those two or three ingredients that you find in your fridge ... and here's how the radicchio and ricotta veggieballsthey were born! Easy to make,with few ingredients but a lot of flavor! They are even eggless, very light but tasty! If you do not like the radicchio you can replace it with another vegetable you like. These veggieballs are perfect for a light lunch or for a happy hour with friends.




Ingredienti
1/2 Radicchio
170 gr. Ricotta Cheese
3 Slices Wholemeal Bread 
1/2 Onion
1 Clove of Garlic
Red Wine
Wholemeal Flour
Salt
Extra Virgin Olive Oil
  • Cut and wash half a radicchio.
  • Chop the onion and cook with a little oil and the clove of garlic. Add a little water to cook it well and then add the radicchio.
  • Let cook a bit and then simmer with the red wine (even the white one is okay). Add salt.
  • When the radicchio is cooked, blend it with a mixer and then drain in order to make it loose the water in excess.
  • Now pour the radicchio in a bowl and add the ricotta.
  • In the mixer where there was the radicchio, blend the 3 bread slices and then add to the mixture. 
  • Mix well, add salt and shape the veggie balls.
  • I've got 18 veggie balls
  • Put a little olive oil on the veggie balls and bake at 200° in baking tray with the baking paper.
  • Cook for about 20 minutes.

Apple Roses

I really love apples, so I've decided to cook this super easy dessert! Cinnamon and apple are a perfect match, if you combine even the puff pastry the result have to be amazing! ;)

 

Ingredients 

1 rectangular Puff Pastry
2-3 Apples  
3 spoons of Brown Sugar 
Cinnamon q.s. 
A knob of Butter 
Lemon Juice


  • Wash and peel the apples.
  • Cut into thin slices and then put them in a bowl with the lemon juice.
  • In a pan, melt the butter and add the apple slices, with a little of cinnamon and brown sugar.
  • Cook until they soften, then keep aside.
  • Cut the pastry into strips, about 5 cm each, and place the apples on each strip as you can see in the picture below, overlapping them slightly.    
  • Fold the pastry over the apples and roll the strip on itself, forming a rose. Help yourself with your hands to not come out the rolled apples (it's harder said than done).
  • Keep on this process for each strip.
  • Place all the roses in the parchment paper on a baking sheet and add a little brown sugar on each rose.
  • Bake in preheated oven at 200 degrees for about 10 minutes, until golden.
  • At the end, add a little powdered sugar.

Carrot Cupcakes with Cream Cheese Icing

If sweets are not a bit special I do not like them, that's why I decided to make these Carrot Cupcakes with cream cheese  :) I 've started with a recipe with pumpkin and then I've changed almost everything... but the result has been amazing! Everyone loved it, even my brother that if there's no chocolate in a dessert, he doesn't eat it in principle! I consider it a great success. Moreover, as you will see from the ingredients, I'vetried to make a treat as healthy as possible, nevertheless they are delicious !!!



Ingredients
250 gr. Carrots
100 gr. Cornstarch
100 gr. Wholemeal Flour
100 gr. Almond Flour
100 gr. Brown Sugar
100 ml. Milk
50 gr. honey
50 ml. Extra Virgin Olive Oil
1 Egg
Orange Zest
Vanilla Flavor
8 gr. Baking Powder
Half a teaspoon of Baking Soda
a Pinch of Salt


Cinnamon Icing

200 gr Philadelphia (even light is fine)
Powdered Sugar q.s.
Cinnamon q.s.

  • Chop the peeled carrots in a mixer. If you do not have it, grate them.
  • Mix with the whisk the egg, the sugar and the honey.
  • When the mixture is smooth, add the chopped carrots and mix.
  • In another bowl, mix the cornstarch, the almond flour, the whole wheat flour, the baking powder and the baking soda.
  • Now add the mixture with the egg to the one with flour, mix with the whisk and add the milk and the oil.
  • Now add the vanilla, the orange zest and a pinch of salt and mix with the whisk until it will be well combined.
  • Take a muffin pan (I got 14 cupcakes) and fill the paper cups more or less for two-thirds.
  • Cook in preheated oven at 180 ° for 15-20 minutes. 
  • After they have cooled down, you can garnish with the Cinnamon Icing, mixing the cheese with the powdered sugar and cinnamon. The amount of sugar depends on your taste, then taste and then decide to add sugar or not. The cinnamon completes the taste of these cupcakes in a way that you can't imagine ... So delicious!

Savoy Cabbage and Rice Soup

The Savoy Cabbage and Rice Soup is a light dish, but very very good. It's not difficult to make so you have definitely to try it!



Ingredients
1/2 Savoy Cababge
1/2 Onion
170 gr Carnaroli Rice
Vegetables Stock
Water
Grated Parmesan
Grated Pecorino
 Salt
Pepper
Extra Virgin Olive Oil

4 – 5 servings
  • Wash and cut the cabbage and stir fry in the chopped onion with a little olive oil. 
  •  Let it cook for few minutes and then cover with the vegetable stock (I do not use stock cubes) and cook about 20 minutes.
  •  At this point add the rice, pepper,salt and cheese and let cook a little less then the cooking time of the rice.
  • Let rest for few hours if you can, because it because better with the passage of time.
  • If it is needed, add water.

Crispy Dill Salmon

You will have realized that the salmon is one of my favorite fish. The Crispy Dill Salmon is a recipe I've invented a long time ago and I do very often because it is my favorite one. You need few ingredients and baking makes it light, crunchy on the outside but moist inside. A real treat!


 Ingredients
  
1 Salmon Fillet
Breadcrumbs
Lemon Zest
Lemon Juice (a few drops)
Extra Virgin Olive Oil 
Dill


  • Remove the bones from the fish.
  • Mix the breadcrumbs with the dill on a plate, and then bread the salmon.
  • Put a little of lemon zest on the fish, a few drops of the juice and add breading.
  • Sprinkle with a little olive oil and bake for 30 minutes at 180 °.
  • I do not add salt because for me it is already quite tasty like this, but if you like it to add it directly in the breading.

Toast with Apple & Cinnamon Compote

Breakfast is the meal I don't like the most, because I don't know what to eat and everything seems to be boring after a few days. So that's why I've decided to cook this recipe, which is very good and light!




Ingredients

1 Apple
1 Slice of Whole Wheat Bread  
1/2 Teaspoon of Brown Sugar
1/2 Glass of Water  
Cinnamon 
1 Low Fat Yoghurt


  • Peel the apple and after removing the seeds and the hard parts, cut into cubes.
  • Heat a pan and put the apple pieces without adding anything.
  • Cook for a minute or two, then add the sugar, the water and the cinnamon. Cook until it becomes soft and if you need it, add water.
  • Toast the bread.
  • When the apple is soft you are ready for breakfast. If you want you can blend everything, but I love to eat the apple pieces.
  • Pour the apple on toast and garnish with a few teaspoons of yogurt.
  • Eat the leftover apple eat with the yogurt, it s delicious!

Codfish Balls with Savoy Cabbage - Light and Tasty

Today I've decided to cook the codfish balls to change recipe and not doing in the pan as usual. I had some leftover savoy cabbage so I've combined the two ingredients and the result has been very good and tasty! These codfish balls are light, without eggs and potatoes.



Ingredients

Frozen Codfish 2 fillets
1/4 Savoy Cabbage
Ricotta 1 spoon
Wholemeal bread  2 slices
Wholemeal Flour
Powdered Garlic
Pepper
Salt
Tahini 1 teaspoon (optional)
Extra Virgin Olive Oil

  • Let defrost the codfish fillets and drain them, otherwise the codfish balls will be too soft.
  • Let boil the savoy cabbage for 20 minutes.
  • Drain the savoy cabbage e put in the mixer with the cut fish, the bread, the ricotta, the spices and the tahini. The tahini is a paste made from ground, hulled sesame seeds used to make the hummus. I've done half dose without it and the result was very good anyway.
  • Now pour everything in a bowl and add a little flour to compact the mixture.
  • Now shape the balls and flour them.
  • Put the balls in a oven dish and pour a litthe olive oil on them. If it is needed ass some salt.
  • Bake at 200° for about 20-25 minutes. They have to be crispy outside and soft inside.
  • With this amount of ignredients I got 16 balls.
